Summer Cocktail Series Featuring Emily Castle:: The Sofia

This drink is nice to have in your repertoire because it’s appropriate for all seasons: It’s light and refreshing for summertime but the spice makes it perfect for fall and winter as well.  Dark rum is infused with Chinese five-spice powder and topped with ginger beer, sugar, and lime.  Thanks go to Jeffrey Morgenthaler for the basis of the recipe, which we named The Sofia after Sofia Vergara because she’s spicy 😉

Ingredients:

Chinese five-spice powder

Dark Rum. We like Blackwell.

Simple Syrup: sugar dissolved into equal parts water

Fresh Lime Juice

For the spiced rum: simply measure 1 teaspoon of the five-spice powder into the bottle of rum and let infuse for 24 hours, shaking periodically.  After 24 hours, strain out the powder.

The Sofia:

2 oz Chinese Five-Spice infused rum

Ginger Beer

Splash lime juice

Splash simple syrup

Pour infused rum into a tall ice-filled glass.  Top with ginger beer, lime and simple syrup.  Garnish with a lime wedge.
